Valka debuting new water-jet cutter at Seafood Processing Global

Iceland-based Valka is debuting a new version of its water-jet cutting machine for pre-rigor salmon at Seafood Processing Global, running from 7 to 9 May in Brussels, Belgium. 

The new cutter is designed to cut and remove pin bones from pre-rigor salmon, in addition to portioning the fillet. The machine uses a dual X-ray camera system to perform a 3D scan of the pin bones and provide exact cutting angles, and is also equipped with two tilting cutting robots that accurately follow the slope. According to Valka, the new machine will increase the productivity for processing companies “extensively.”

“We are extremely proud to be presenting our groundbreaking water-jet Cutter machine at Seafood Processing Global,” Valka’s CEO Helgi Hjálmarsson said. “It is our long-term goal at Valka to move beyond white-fish processing, and this machine is the first step in that direction. We are excited to start working with the salmon industry in streamlining their production to both best utilize the fish and to maximize their value.” 

Where in the past processors would have to wait for the fish to get past the pre-rigor stage to remove the pin bones, Valka’s new machine will allow for deboning immediately after filleting, adding shelf-life to the products. The flexibility of the new cutters will also allow for new portion types, according to Valka. 

Valka will be exhibiting at Seafood Processing Global in Hall 4 at Stand #6115-1.
