Revo Foods, Mycorena using 3D printing to create fungi-based seafood alternatives
Vienna, Austria-based Revo Foods has announced a research collaboration with Gothenburg, Sweden-based biotechnology company Mycorena to explore 3D printing of seafood alternatives.
Mycorena has developed a fungi-based mycoprotein, and the collaborative research will be conducted to explore if it is viable to use it in combination with 3D food printing to create seafood analogs.
“We have always been interested in food 3D printing and saw that creating a printable mycelium material would probably open doors to creating amazing, unique products," Mycorena CIO Paulo Teixeira said. "With this technology, the possibilities for texture and form are on another level compared to current meat analogs, being restricted only by imagination, not processing methods.”
The soft fibrous texture and light-colored appearance of the "promyc " material shows potential for both meat and seafood analogs, Mycorena R&D Manager Kristina Karlsson said.
“We are very excited to finally reveal our collaboration with Revo Foods. We believe we will create some truly unique products here, making it easy for consumers to enjoy delicious seafood in a healthy and sustainable way,’’ Karlsson said.
Revo Foods introduced its 3D food printing food products in June 2022 by launching a plant-based salmon fillet analog. In September, it launched three new plant-based seafood analog products, including gravlax and plant-based salmon spread, which are being sold in more than 3,000 locations in Europe.
“Mycoprotein is a very interesting ingredient for vegan seafood alternatives, however, we were previously limited in using it in our proprietary 3D food printing process as the fibrous behavior was altered," Revo Foods CEO Robin Simsa said. "With this new collaboration with Mycorena, we see huge potential to develop the printable mycoprotein further, which can lift meat/seafood alternatives to the next quality level, necessary for large-scale consumer adoption.”
