First look: Flavored oysters from France expected to come to market by Fall 2017
Joffrey Dubault, the founder and innovator behind the upcoming “flavored oyster” from French company Les Huîtres Dubault, has created a product with an eye toward modern consumer habits and trends.
Set to be distributed to markets in France, Europe, Asia and more by September 2017, SO’OOH flavored oysters are infused with taste profiles including lemon, shallot, muscat and truffle, thus cutting out the need for preparation or additional side items – simply shuck and enjoy, Dubault explained to SeafoodSource during Seafood Expo Global/Seafood Processing Global 2017.
The oysters, which are farmed in France, come in wood packaging, and can be purchased as a sampler or per box containing one flavor of choice. The sampler package includes six oysters of each flavor, said Dubault.
The company, which is exhibiting at SEG17 in Hall 7 (Stand No. 1501), is looking to distribute the product to retailers, the foodservice sector and direct to consumers.
